Pumpkin Cookies

Ingredients

  • 2 cups all-purpose flour, spooned and leveled

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon sea salt

  • ½ cup unsalted butter, at room temperature

  • 1¼ cups packed brown sugar

  • ¾ cup pumpkin puree

  • 1½ teaspoons pumpkin pie spice

  • 1 teaspoon vanilla extract

  • 1 large egg

  • Cream cheese frosting, optional

  • Crushed pecans

  1. Pre-heat oven to 350˚ F and line a baking sheet with parchment paper.

  2. Combine flour, baking powder, baking soda, salt, and pumpkin spices together.

  3. In a mixer, cream butter and sugar together until smooth.

  4. Mix in pumpkin puree, egg, and vanilla.

  5. Gently add the flour mixture to the wet ingredients a little at a time.

  6. Scoop 2-3 tablespoons of dough onto parchment paper.

  7. Cook for 6 minutes and then rotate the pan, cooking for another 6 minutes.

  8. Let cool before icing. Sprinkle pecans on top to finish.
