Pumpkin Cookies
Ingredients
2 cups all-purpose flour, spooned and leveled
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt
½ cup unsalted butter, at room temperature
1¼ cups packed brown sugar
¾ cup pumpkin puree
1½ teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1 large egg
Cream cheese frosting, optional
Crushed pecans

Pre-heat oven to 350˚ F and line a baking sheet with parchment paper.
Combine flour, baking powder, baking soda, salt, and pumpkin spices together.
In a mixer, cream butter and sugar together until smooth.
Mix in pumpkin puree, egg, and vanilla.
Gently add the flour mixture to the wet ingredients a little at a time.
Scoop 2-3 tablespoons of dough onto parchment paper.
Cook for 6 minutes and then rotate the pan, cooking for another 6 minutes.
Let cool before icing. Sprinkle pecans on top to finish.
