A Simple Kale Salad

Curly Kale with Lemon, Olive Oil, Salt and Peptic Seeds

Here is a quick and refreshing lunch option that is healthy and energizing on a hot summer’s day.

Ingredients:

  • 3 cups of chopped curly kale

  • 2 tsp Olive Oil

  • Juice of 1/2 a lemon

  • Pinch of kosher salt

  • Pepita seeds

Drizzle olive oil over the kale and massage kale until less it’s less rigid. Add lemon juice and salt to taste. (the salt should balance the acidity of the lemon). Sprinkle some pepita seeds on top. Add other toppings if you wish!
